The Aesthetics of Expression
We do not rely on direct expression.
In a world where information travels instantly, we choose restraint.
By leaving room for interpretation, imagination awakens,
and within this imperfection, we hope for empathy with our intentions.
It drifts between order and disorder,
a gentle rhythm played by nature.
This quiet sway
creates a subtle comfort that is uniquely yours.
Even our own imperfections
are softly and kindly embraced.
Doesn’t our pear, the symbol of neel, feel just like that?
At neel, our design team calls it the Neel Wave.
The Neel Wave flows gently through counters, railings, and lighting,
tracing soft rhythms and natural curves.
Solid woods and reclaimed materials bring a subtle, nostalgic warmth to the space,
while rare vintage pieces scattered throughout the stores exist not for display,
but because they belong there.
True beauty is not found in perfection,
but in the 1/f fluctuation that quietly resides within imperfection—
this is neel’s Aesthetics of Flow.
A relaxing space is one that leaves room for imperfection and love.
Our iconic pear logo originates from an oil painting by Megumi Yuasa,
a staff member and mother of triplets.
Her artistry continues to shape neel’s identity.
Neel’s artwork also features contributions from metalworkers, sculptors, filmmakers,
and Japanese artists,
each reflecting craftsmanship, care, and meticulous attention to detail.
All of neel’s coffee is single origin.
Each farm, each land, carries its own story.
To highlight the unique character of each bean, they are carefully roasted in small batches every day
at Coffee Roastery neel, a dedicated space crafted for this purpose.
In the coffee world today, the focus is shifting from the depth of roasting to the moisture content and the complex character of the green beans themselves.
We pour our passion into uncovering the delicate individuality of each green bean, striving to express our philosophy through its unique character.
Through this process, the beans’ natural aroma and flavor quietly awaken,
gently unfolding in your cup.
A new wave of simple crepes in Japan began in 2017 with our signature Sugar Butter Crepe.
At the heart of neel lies the art of subtraction—removing the unnecessary, leaving only what truly matters. This crepe is the embodiment of that philosophy.
At first glance, it appears quiet and unadorned.
Yet within its simplicity, every detail is intentional.
With the first bite, the exterior breaks with a light, delicate crispness.
As you continue, the texture gently transforms—
becoming soft, tender, and satisfyingly chewy within.
Opposing sensations come together in harmony,
opening the door to what would become Japan’s simple crepe culture.
That single crepe resonated deeply.
Over time, it has inspired countless followers
and continues to shape a movement defined by restraint and craft.
***The Beginning of the Story
The Sugar Butter Crepe was first brought to life
in the small kitchen of La Crêperie de Popin!
the predecessor of our company.
Its sablé-like crisp exterior and gradually emerging chewiness were not the result of careful calculation,
but of a fortunate discovery during the prototype stage.
At the time, it was little more than a quiet indulgence—
a simple snack enjoyed by staff during breaks.Yet when it was finally placed on the menu,it was met with confusion, surprise, and curiosity.
That moment marked the beginning of a ripple. The crepe spread swiftly across Japan.
Early reviews from the original shop—still in operation today—
capture the divided reactions of encountering something entirely new.
Those voices remain as proof:
of a crepe unlike any before,
and of the moment a new culture was born.
Our katsu sandwich is truly one of a kind.
Every ingredient is measured to the gram, precise yet nuanced.
Within its subtle layers of flavor,
how many of its hidden secrets can you discover?
